1/2 cup shredded cheese
1 tsp tarragon or rosemary
Slice one zucchini lengthwise into 6 pieces. Spray with nonstick spray and grill until done, 3-4 minutes on each side. Slice zucchini into thin, noodle-like strips. Sprinkle with ½ cup shredded low-fat mozzarella and 1 tsp chopped tarragon or rosemary. Serve as a vegetable or pasta side dish to any grilled meat.
