  • Recipe of the week: Salmon and avocado BLTs

    4 slices diagonally cut ciabatta or Italian bread
    4 center-cut bacon slices
    4 (4 oz portions) skinless salmon fillets
    ¼ cup mayonnaise
    2 Tbsp water
    1 Tbsp minced fresh chives
    1 ½ tsp Dijon mustard
    4 Lettuce leaves
    4 slices tomato
    ½ peeled, ripe avocado cut into 8 slices
    4 lemon wedges
    Preheat broiler to high. Arrange bread slices on a baking sheet and broil 1 minute on each side or until toasted. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove from pan. Add salmon to drippings in pan; cook 4 minutes on each side or until desired doneness. Mix mayonnaise, water, chives and mustard in a small bowl. Spread over bread slices; top each with 1 slice of bacon, 2 lettuce leaf, 1 tomato slice (halved), 2 avocado slices and 1 salmon fillet. Serve with lemon wedges.
