  • Recipe of the week: Grilled zucchini caprese

    2 zucchinis
    ½ cup diced seeded tomato
    2 Tbsp chopped fresh basil
    2 tsp olive oil
    1 tsp red wine vinegar
    ¼ tsp salt
    ¼ tsp pepper.
    ¼ cup finely shredded mozzarella cheese
    Slice zucchini in ¼ inch slices on the bias. Grill 2 minutes on each side. Preheat the broiler. Arrange on a foil lined baking sheet. Mix together tomato, basil, oil, vinegar, salt and pepper in a small bowl. Top zucchini evenly with tomato mixture; sprinkle with mozzarella. Broil 2 minutes, or until cheese melts.
