  • Recipe of the week: Gluten-free peanut butter chocolate chip cookies

    ¼ tsp salt
    1 large egg white
    1 cup chunky peanut butter
    1/3 cup sugar
    ¼ cup brown sugar
    ¼ cup semisweet mini chocolate chips
    Preheat oven to 375 degrees. Place salt and egg white in a medium bowl. Whisk until frothy. Add peanut butter, sugars and chips; stir to combine. Divide dough into 20 equal portions and arrange on a cookie sheet lined with parchment paper. Gently press the top of each cookie with a fork in a crisscross pattern to flatten. Bake about 10 minutes or until lightly browned.
