  • Recipe of the Week: Avocado Brie Bites

    1 baguette, whole wheat preferred
    3 avocados
    1 white onion
    1 large tomato
    8 ounces Brie
    1 teaspoon Italian spice blend
    1 Tbsp. extra virgin olive oil
    Preheat oven to 350 degrees. Cut baguette into slices 1/2 inch thick. Put aside. Chop onion and tomato finely and add to bowl, along with peeled and hulled avocado. Mash mixture in bowl well with fork.
    Spray cookie sheet with non-stick oil, and place bread slices on cookie sheet. Put a dollop of mixture on each slice. Press mixture down so it covers most of the slice, then cover with small slice of Brie cheese. Brush top of Brie lightly with olive oil, then sprinkle with Italian Spice blend. Bake in oven for 8 minutes or until cheese is lightly browned.
