  • Recipe of the week: Butterscotch blondies

    1 cup whole wheat pastry flour
    ½ tsp baking powder
    ½ tsp salt
    ¼ cup butterscotch morsels
    2 Tbsp half-and-half
    ¾ cup packed brown sugar
    3 Tbsp canola oil
    3 Tbsp butter, melted
    1 tsp vanilla extract
    2 large eggs
    1/3 cup semisweet chocolate chips
    Preheat oven to 350 degrees. Light spoon flour into a measuring cup and level with a knife. Combine flour, baking powder, and salt in a medium bowl; stir to combine.
    Combine butterscotch morsels and half-and-half in a microwave safe bowl and heat on high for 45 seconds, stirring every 15 seconds. Stir until smooth.
    Beat brown sugar, canola oil, butter, vanilla and eggs with a mixer until just combined. Add the butterscotch mixture and flour. Mix just to combine. Stir in chocolate chips. Pour into an 8″ square baking pan coated with nonstick spray. Bake for 40 minutes or until a toothpick inserted into the center comes out with moist crumbs clinging. Cool, then cut into 16 squares.
