  • Recipe of the week: Tomato cucumber salad

  • 3 cups peeled, chopped cucumbers
    2 cups chopped tomatoes
    ¾ cup chopped red onion
    ¼ cup chopped parsley
    3 Tbsp chopped fresh cilantro
    ½ tsp salt
    Combine all in a large bowl. Cover and chill 2 hours before serving.
