  • Recipe of the week: Spiced grilled shrimp

    1 pound peeled and deveined raw extra-large shrimp, tails on
    1 ½ Tbsp olive oil
    2 tsp ground cumin
    2 tsp chili powder
    ¼ tsp ground coriander
    ¼ tsp salt
    ¼ tsp black pepper
    3 large lemons, halved
    2 Tbsp minced parsley
     
    Coat the grill rack with cooking spray. Preheat the grill to medium high heat.
     
    Drizzle the shrimp with olive oil. Combine the seasonings and rub onto the shrimp. Place the shrimp directly on the grill rack or use a grill basket. Grill 2 to 3 minutes or until cooked through.
    Meanwhile, add the lemon halves, cut side down, to the grill and grill for 3-4 minutes or until slightly charred. Place everything on a platter and garnish with the minced parsley. Serve with grilled pineapple slices.
